Chewy Oatmeal Cookies



I love cookies which are chewy, have enough sweetness and a little crunchiness on the edge. Here it is!!! It's really tasty and very simple to prepare! It’s good for snacks and breakfast too.
 I’ve got this recipe from a friend. I made only some  alteration since we’re not fun of eating raisins I used chocolate chips instead and added vanilla extract to it. What I have experienced before in cooking cookies was I had a hard time in mixing the butter and sugar while I prefer to beat it only with my hands. So what I did for this was melting the butter first then mix it after. I would suggest if you dont have available mixer at home, take the butter from the fridge and allow it to come to room temperature before using. Through this, you'll have easier job when mixing it with the sugar. But for those who want to try out this recipe at home, I would suggest beating it with a mixer so you’ll have fluffier butter mixture and to lessen your effort as well. If you are going to use a mixer then, just cream the butter instead. No need to melt it!!  If you can see the mixture is soft and creamy after mixing all the ingredients don't panic! That is because of the melted butter so that's fine! Do not add more oats or flour! Just put little amount of mixture in the baking sheet later to get a desired sizes of your cookies (if you’re not using any molder). The mixture will drift as it cooks so don’t put more than a tablespoon for this recipe because you can get a bigger size of cookies which you don’t expect. I want this cookies chewy as I said, so putting enough amount somewhat like not so thick and not so thin to get my desired chewy-ness . So there you go… Let’s start!

Ingredients:
  • 1 cup oats
  • 1 raw egg
  • 3/4 cup all-purpose flour
  • 3/4 cup light brown sugar
  • 1/2 cup butter, melted
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup chocolate chips

Cooking Procedure for Chewy Oatmeal Cookies:

1.    Line a baking sheet with parchment paper.
2.    Whisk flour, baking powder and salt in a clean bowl. Mix well. Set aside.
3.    Place the pan in a low heat. Put the butter until melted. Transfer to clean bowl and set to room temperature.

If you are planning to use a mixer, just skip step 3. Just proceed to step 4 by putting the butter into the bowl of your mixer then cream it!
 
4.    In a bowl of your electric mixer add the cooled melted butter and light brown sugar. Beat until becomes fluffy.
5.    Add-in the vanilla extract. Continue mixing for 2-3 minutes. Add the egg and beat for another 1-2 minutes.
6.    Gradually add the oats and mix until well incorporated.
7.    Gradually add the flour mixture (flour, baking powder, salt). Mix again. Mix-in chocolate chips with a spatula until well distributed.
8.    Preheat oven to 350 degrees F (175 degrees C)
9.    Put at least 1 teaspoon of the mixture on the prepared baking sheet. Flatten and arrange it by putting space in between of the mixture. Bake for 10 to 12 minutes.
10.  Remove from the oven and transfer to a clean sheet/plate to cool. Do the same for the next batch.
11.  Share and enjoy!
Makes 12 servings

Note: If you want crunchier cookies, put lesser amount of mixture over the baking sheet and flatten to form a thinner circle. You can also make a glaze  (mixed egg white plus about 1 tablespoon of water) used to spread over the flattened cookies to get a golden brown finish. You can bake for 10-15 mins.
