My Tower Like Vanilla Cupcake

 
 
I have nothing much to say about this tower like vanilla cupcakes but these simply taste right and very simple to make. It started with a white cake batter that comes to a soft texture when eaten. Instead of using vanilla extract I substitute it to lemon juice to make it more healthier.  I made this cupcakes for the christening of my son so I thought of making the frosting look like a tower so some kids from the visitor would love it more... and it did!! For me, I dont like toppings that are so sweet so I prefer to add a little sugar just to taste on this.

Cupcakes are perfect for any occassion it can be an afternoon snack, kids birthday parties or even a for a friend's birthday present may probably do! Check out my chocolate cupcake (click link for the recipe).


Ingredients:


1/2 cup unsalted butter, room temperature

2/3 cup granulated white sugar

3 large eggs

1 teaspoon vanilla extract ( I used 1 teaspoon lemon juice instead)

1 1/2 cups all purpose flour

1 1/2 teaspoons baking powder

1/4 teaspoon salt

1/4 cup milk (evaporated milks will do)




Frosting:

3/4 cup Whip Topping


2 tablespoon sugar


Color gel/paste if needed

Procedure for Tower Like Vanilla Cupcake:


1. Preheat oven to 350 degrees F (177 degrees C) and place cupcake liners in a cupcake tin.

2. In a bowl of electric mixer or hand mixer beat the butter and sugar until light and fluffy. Add the eggs, one at a time. Beat in lemon juice (or vanilla if using).
3. In a separate bowl whisk together flour, baking powder and salt.

4. Set the mixer on low speed. Alternately add the flour mixture and milk in a bowl. Scrape the side of the bowl if needed.

5. Pour the batter mixture to the prepared cupcake liners. Bake for about 17 - 20 minutes (or you can check if the toothpick inserted into a cupcake comes out clean a few minutes before the stated baking time. Do not over bake so the cupcake won’t get dry.)

6. Remove from oven and place on a wire rack to cool. (Since our house is quietly humid during day time, I usually place it in an air conditioned room to help the cupcake cooled quickly.) Once the cupcakes have completely cooled, frost it with the whipped frosting with the design you like and that’s it!! Your little cakes are done. (I’m using Wilton 364 decorating tip for this recipe).

Procedure for Frosting:

1. Place whip topping in an electric mixer until it reaches its peak that when you raised the hook of the mixer it won’t drop. (Place the bowl mixer, the hook and decorating tip in the freezer for about 15mins before using. It really help make the frosting easily reaches its peak. Whip topping must be chilled)


2. Add a little sugar to your desired taste. Add on your desired coloring gel/paste, if needed


Makes 16 cupcakes.
